Carrot Cake Ring? Yes please!

Hi everyone,

Aimee asked me to make a cake for a bake sale at her job on Thursday. I found a great recipe for carrot cake online and I made it a few times and it turned out really delicious.  I figured I would share it with you.  Here is the Direct link to original recipe.  I made a few small changes to mine, for a little more flavor.

Carrot Cake Ring - Modified

2 c. flour
1 1/4 c. veg. oil
1 c. packed brown sugar
3/4 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1 tsp. vanilla
1/4 tsp. ground cloves
1/4 tsp. ground allspice
1/4 tsp. ground nutmeg
1/2 of 6 oz. can frozen orange juice concentrate (thawed)
4 eggs
2 c. shredded carrots
1 c. chopped walnuts
1/2 c. raisins
1/2 c. dried cranberries
Preheat oven to 350 degrees. Grease and flour 10 inch bundt pan.Into large bowl, mix first 13 ingredients at low speed with mixer. Beat at high speed for 4 minutes. With spatula, fold in carrots, walnuts and raisins.

Pour into prepared bundt pan. Bake 50 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes - remove from pan. Sprinkle cake with confectioners' sugar.

This cake is so moist and delicious! I do not use confectioners sugar, but that is a personal preference.  I love carrot cake and it is one of the only carrot cakes where I can actually see carrots in the cake.  Right now it is after 11pm, so I am sure the Mrs. will let everyone know how it is...especially since I made a cake for her, with no raisins.  I doubled the cranberries in the cake to compensate.  I am sure she will enjoy it!

    1. Thanks! One day I may try the Cream Cheese frosting...but that may cause heart issues!
